Starters

Starters
- Bavarois and tartare of oysters with seaweed jelly, potato crisps and caviar- Loin of tuna wrapped in basil with a salad of radish and soy
- Scallops roasted in liquorice with a fennel duxelle and white onion purée
- Lasagna of rabbit with wild mushrooms, celery and thyme
- Poached and fried duck egg in kataifi with a ragout of stuffed morels, snails and bacon
- Goats cheese tortelloni with date puree, beurre noisette, almonds and wood sorrel
- Roast foie gras with endive and mango marmalade, blood orange puree and puffed grains (£5 supplement)
Main Courses
- Fillet of sea bass with parmesan and polenta agnolotti, wild garlic and morels- Monkfish baked in rosemary with a persillade of wild mushrooms and a monkfish cheek and truffle schnitzel

- Pyrenean milk fed lamb baked in hay with creamed potato, celery and truffle
